Roasted Pumpkin Seeds–Healthy AND Delicious!

We just finished carving pumpkins last evening.  I’m guessing many of you did too since Halloween is upon us.

   

Don’t throw away those yucky pumpkin guts just yet.  If you are willing to get your hands a little messy and spend just a few short minutes you can whip up a healthy and delicious snack that you and your family will love.

Roasted Pumpkin Seeds

Cook time:  20 mins
Total time:  30 mins
 
Ingredients
  • Seeds from 1 Large Pumpkin
  • 3-4 Cups of water
  • 2 tsp Salt (separated)
  • 1 Tbsp Olive Oil or Melted Butter
Instructions
  1. Preheat oven to 350
  2. Cut the top off the pumpkin
  3. Scoop out all of insides using a large sturdy spoon
  4. Separate the seeds and discard the rest
  5. Rinse the seeds thoroughly in a colander
  6. Place seeds in a sauce pan with 3-4 cups of water and 1 tsp of salt
  7. Boil for 9-10 minutes
  8. Dry the seeds on paper towels
  9. Place the seeds in a bowl and toss with the olive oil (or butter) and 1 tsp of salt
  10. Spread seeds evenly on a baking sheet and bake15-20 minutes (or until golden brown)

Here’s what you need:

Cut the top off the pumpkin:

Scoop all the insides out and place in a large bowl or container:

Separate the seeds from the yucky, slimy, pumpkin innards:

Rinse them thoroughly in a colander and dry on some paper towels:

Mix Olive Oil (or melted butter) and salt in a bowl:

Place the seeds in the mixture and toss to coat completely:

Spread coated seeds on a baking sheet:

Bake in 350 degree oven for 15-20 minutes (or until toasty brown):

If you are roasting seeds from more than one pumpkin–just increase the amount of salt you use and bake longer.

These are SO good! Be sure and hide them from your family so you can enjoy more!
