Delicious Fried Chicken

My boys have proclaimed this recipe for fried chicken as better than KFC.  When they lay the compliments on that thick–I’m always a little suspicious about the sincerity and/or their motives.  Either way this is a really good fried chicken recipe.

Delicious Fried Chicken

Ingredients
  • 1-2 lbs chicken pieces (I use legs)
  • 2 Cups oil
  • 2 Eggs
  • 2 Cups Milk
  • Season Salt to taste
Instructions
  1. Preheat oven to 450
  2. Rinse and pat dry the chicken pieces
  3. Heat the oil in a large skillet pan
  4. Whisk the eggs and milk in a medium bowl
  5. Place flour in a separate larger bowl
  6. Dip the chicken pieces in the egg mixture one piece at a time and then transfer to the flour
  7. Roll the pieces in the flour coating them thoroughly.
  8. Place flour coated chicken pieces in hot oil one at a time and allow to fry or 3-5 minutes on each side or until golden brown.
  9. Transfer each piece to paper towels to drain.
  10. Sprinkle each side of the chicken with season salt
  11. Place chicken on a baking pan
  12. 'Bake for 20 minutes or until chicken is cooked through

It’s quickly become a family favorite and my older son, Morgan, even had requested having this for his packed school lunch every day for a while.  As with most fried foods, it’s a little messy to make but the steps are simple.

Rinse and pat dry the chicken.  I use about 2 pounds of chicken legs, but you can certainly use whatever parts you wish.

Heat the oil in a large skillet.

Mix the eggs and milk in a medium bowl.

Place the flour in a separate bowl.

Dip each piece of chicken first in the egg mixture and then immediately in the flour.  Make sure to coat each piece.

Once all the pieces have been dipped and coated in flour, place them one at a time in the heated oil. Only do about 5-6 pieces at a time depending on the size of your skillet.

Let them fry for about 3-5 minutes on each side or until golden brown.

Place the pieces on some paper towels to drain.

Sprinkle each side of every piece with the season salt.

Place the chicken on a baking pan and allow to cook for about 20 minutes in a 450 degree oven.  You can certainly fry the chicken completely in the oil if you wish.  I like the fry and bake method because they don’t taste quite as greasy.

I made this for dinner last night and Super Rockstar REALLY loves the leftovers cold for lunch the next day.  However, I completely  forgot to pack a lunch for him today and I’m hoping he will forgive me.  Two day cold fried chicken is still just as good.

      So….I accidently left the leftovers on the counter–for the past 2 days. I love you far too much to allow you to get sick. It just wasn’t meant to be.
